Who doesn’t love a warm and comforting bowl of soup? Tom Yum soup is a Thai soup that has a similar taste to that of hot and sour soup and is one of the most famous soups. In Thai, Tom refers to the boiling process, and Yam means ‘mixed’. It has an intoxicating aroma and is a delicious and healthy dish.
While the authentic Tom Yum soup is made with shrimp, we have for you a vegetarian version of it that uses tofu as the protein. So follow this simple 5 step recipe to make aromatic and delicious vegetarian Tom Yum soup at home.
Prepare vegetable stock by adding finely chopped 1 medium-sized onion, 2 stalks of celery, 1 medium-sized carrot, 6 cloves of garlic, and 6 sprigs of thyme and parsley, green onions in a pan. Add a pinch of salt and 2 cups of water. Let the vegetables cook for 30 minutes on medium heat. Strain the stock and discard the vegetables.
Add 5 cups of vegetable stock to a pan. Add the 2 minced lemongrass stalks, plus 3-4 lime leaves, 3 red chillies, 3 cloves of garlic, and 1-2 pieces of ginger, thinly sliced.
To the pan, add ½ cup sliced shitake mushrooms. Bring the stock to a boil and cook the mushrooms on medium heat for 5-7 minutes. Now add 1 cup chopped bok choy and ½ cup finely chopped tomatoes. Saute these for 2-3 minutes on high heat.
Add 2 tsp soy sauce, ½ tsp sugar, and 1 tsp lemon juice to the pan. Add 2 cups of roughly diced tofu.
Add a pinch of salt and let it simmer for 2-3 minutes. To make it spicy, you can add 2 tsp of chilli sauce to the pan. Pour the soup into a soup bowl and garnish it with some fresh coriander leaves. Serve hot.
